3 Put the butter and chocolate in a small saucepan. Stir and melt over a low heat. You should get a perfectly homogeneous melted chocolate.

4 Cool the melted chocolate and butter to room temperature.

5 In a separate bowl, whisk together the eggs, sugar and vanilla (you can use vanillin, vanilla sugar or vanilla essence). Add the melted chocolate and mix very well until completely homogeneous. If desired, chop the nuts and add them to the batter).

6 Add the flour and a pinch of salt to the chocolate mixture. Mix everything very well. You should get a homogeneous and smooth dough.

7 Pour exactly half of the batter into the prepared mold and place it in the refrigerator.

8 Put all the toffees into a small saucepan, add a small quantity of hot water, place on a fire, and constantly stirring, melt the toffees. Add another tablespoon of water if needed. You should have a smooth hot caramel sauce.

9 Let it cool for five minutes, remove the mold with half of the dough from the refrigerator, and carefully pour all of the caramel onto it. Put it away in the refrigerator for another half hour.

10 Take the dough and caramel out of the refrigerator and carefully pour a second layer of dough over the layer of caramel, spreading the second layer of dough over the entire surface with a silicone spatula or spoon as needed.

11 Set the mold aside for about 10 minutes to allow the dough to come to room temperature.

12 Bake the brownies in a hot oven for 40 minutes, or until completely cooked through. You can check if the brownies are ready by poking them in the middle with a toothpick – if the wooden toothpick comes out dry, without any raw dough residue, they are ready. It is very important not to over-dry the brownies as they should be very tender and moist.

13 Let the brownies cool slightly and slice just before serving.

This is one of the easiest and tastiest recipes for cooking dorado, although sea bass can easily replace sea bass.

Peeling the fish of scales in this recipe is not necessary, the skin is elementary removed after cooking. If the fish has just been caught, which is almost impossible in our conditions, bake it for only 7-10 minutes, but we recommend to keep it in the oven for 15-20 minutes. It is very important not to over dry the fish. You can simplify the recipe even more and not add garlic.

1 Preheat the oven to 200 degrees.

2 Remove the gills and innards from the fish. If desired, peel off the scales.

3 Rinse the fish well under cold water.

4 Place the fish on a baking tray or baking dish.

5 Place a few slices of finely sliced lemon and a sprig of rosemary in the belly of each fish.

6 Put a sprig of rosemary on each fish, throw a few cloves of garlic right in the peel and lightly crushed with a knife, squeeze the juice of one or two lemons over the fish, drizzle liberally with olive oil, sprinkle with coarse sea salt and freshly ground black pepper.

7 Place the fish in the oven for 15 to 20 minutes. Check if the fish is cooked through with a knife, the meat should not be translucent. Do not overcook it.

8 Serve the baked dorado with the green salad and extra virgin olive oil.

Spaghetti – 300 gr.
Shallot onions – 1 pc.
Garlic – 2 cloves
Bacon – 150-200 gr.
Egg yolks – 3 units.
Cream – 200 ml.
Parmesan – 70 gr.
Olive oil – 2 tablespoons.
Ground black pepper – to taste

Carbonara is a classic Italian pasta based on eggs and bacon. In the traditional version, this pasta is cooked without cream, but just add an egg at the very end and stir very quickly, so as not to get an omelette, but since this requires a certain knack, we recommend adding cream to the sauce. It turns out to be a win-win that just can’t fail. Most importantly, don’t forget to stir the sauce and don’t overcook the spaghetti. The shallot may well replace the usual small onion, also, if desired, you can choose any other type of pasta.

1 Very finely chop the onion and garlic. Cut the bacon into thin strips.

2 Cook the spaghetti in boiling, salted water for as long as indicated on the package. The spaghetti should remain slightly firm in the middle.

3 In a separate bowl, mix the yolks, cream, and grated parmesan. Whisk everything well with a whisk. Set aside.

4 Meanwhile, in a separate pan or deep frying pan, sauté the onion and garlic in the olive oil, stirring everything with a wooden spatula to prevent the garlic from burning. When the onions are translucent, add the bacon and sauté together for 3 to 4 minutes, stirring occasionally.

5 Add cooked spaghetti to the onion, garlic and bacon in the pan, mix well. Stirring vigorously, pour the egg mixture into the pan, reduce the heat and stir the pasta with a spoon; the sauce should thicken but not turn into an omelette.

6 When the sauce has thickened, remove the pan from the heat.

7 Arrange the carbonara on plates and sprinkle each portion with ground black pepper and Parmesan.

Ingredients – for the fruit filling
Apples – 2 pcs.
Butter – 5 tablespoons
Sugar – 200 gr.
Cinnamon – 1/2 teaspoon.
Lingonberry – 3 cups
Maple syrup – 3 tablespoons
Ingredients – for dough
Butter – 180 gr. (soft, room temperature)
Sugar – 200 gr.
Sour cream – 120 gr.
Egg yolk – 3 pcs.
Vanilla essence – 1 tsp.
Flour – 250 gr.
Baking powder – 10 g (one bag)
Salt – a big pinch

Upside down cake or flip cake can be made with a variety of fruits and berries. Now, in winter, we offer a recipe with apples and lingonberries, which is made with maple syrup and cinnamon. Maple syrup can be replaced with honey if you wish, and lingonberries with cranberries or your other favorite berries. Take note of the dough recipe, it turns out very tasty, and it’s quite easy to make. If you’re using frozen berries, be sure to defrost them before cooking, it only takes a couple of minutes if you put them in a colander and rinse under cold water – so they melt almost instantly. The pie turns out quite sweet, if you don’t like very sweet desserts, in this recipe you can safely reduce the amount of sugar to your taste.

1 Preheat the oven to 180 C

2 Line a baking dish (preferably round) with parchment paper. If desired, grease it with butter.

3 Peel the apples and cut them into medium sized cubes.

4 In a small saucepan or frying pan, melt 1 tbsp of butter, put the apples and one tablespoon of sugar and fry them until golden, about 5 minutes. Set aside.

5 Heat a frying pan, add 4 tablespoons of butter, the remaining sugar, cinnamon, cranberries and maple syrup. Add two tablespoons of water if needed.

6 Cook everything together, stirring, for seven minutes, you should get something like a thick jam. The berries should not burn, turn down the heat if necessary. If you are using frozen berries, the cooking time may increase.

7 Set the finished berries aside and let them cool while you make the dough.

8 For the dough, using a whisk or mixer, beat the soft butter and sugar until smooth.

9 Add the sour cream, vanilla essence (or vanilla sugar) and, whisking constantly, begin adding the egg yolks, one at a time. Whisk until completely homogeneous.

10 Add the flour, baking powder and salt. Stir, and then on low speed beat the batter until completely homogeneous, about one minute maximum. The batter should be smooth and lump-free.

11 Place the apples in the bottom of the prepared tin, then spread the cranberries on top.

12 Place the batter on top of the berries and spread it out evenly using a spoon or a silicone spatula.

13 Place the pie in the oven and bake until fully cooked, 40 to 50 minutes.

14 Remove the finished pie from the oven and allow it to cool.

15 Place a plate on the mold and turn the pie over onto it. This way the berries should be on top.

Raspberries – 450 gr.
Sugar – 150-200 gr.
Juice of half lemon
Water – 80 ml.

This is one of the easiest and most versatile ways to make sorbe. Feel free to swap raspberries for your favorite fruit or berry, mix different flavors, add yogurt, and you will always have fresh ice cream of your own making. You can change the sugar ratio in accordance with your own taste, but in our opinion, 150 gram is a perfect variant, it turns out not too sweet and not too sour, in general, as it should be. If you do not have a special freezer, then do not forget to whip the sorbet while freezing, so that no ice crystals were formed. You can use both frozen berries and fresh ones.

1 Place the raspberries and 4 tablespoons of sugar in a blender. Squeeze the juice of half a lemon over the raspberries and leave for about 40 minutes, during which time they will run clear (and thaw if you are using frozen berries) and the sugar syrup, which you are about to make, will have had time to cool. Then beat everything with a blender until it’s pureed.

2 In the meantime, take care of the sugar syrup. Put the remaining sugar in a small saucepan and pour hot water over it. Put the pot on a small fire and cook the syrup, stirring all the time. In 3 minutes it will be ready. Take the syrup off the heat and let it cool down completely.

3 When the syrup has cooled completely, add it to the whipped raspberries and whisk everything well with a blender again.

4 Pour the raspberry mixture into a freezer container and place in the freezer.

5 Take the sorbet out of the freezer every 1.5-2 hours and whip it again with a blender.

6 Do this three times at regular intervals. This is to prevent ice crystals from forming in the sorbet, so that it will be more tender and homogeneous.
